Experienced Fish Processors / Fish Filleters are required for full-time positions within a busy commercial seafood processing environment in New Zealand.

These roles are suited to experienced seafood processing workers with excellent knife skills and proven experience gutting, scaling, trimming, cleaning and filleting fish.

The work is fast-paced and physically demanding, with successful applicants required to work efficiently in a chilled and wet processing environment while maintaining high standards of product quality, hygiene, food safety and accuracy.

Key Responsibilities

  • Gut, scale, clean, trim and fillet fish accurately and efficiently.
  • Remove bones, skin, fins and other unwanted material from fish.
  • Use knives and seafood processing equipment safely and effectively.
  • Prepare, cut and portion seafood products according to production specifications.
  • Inspect processed fish to ensure required quality standards are maintained.
  • Maintain accurate and consistent filleting and cutting standards while working at production speed.
  • Handle and store seafood products correctly throughout the processing operation.
  • Clean and sanitise knives, equipment, workstations and production areas.
  • Follow all food safety, hygiene, health and safety and quality procedures.
  • Work effectively as part of a production team to achieve daily processing targets.

Minimum Requirements

  • At least 2–3 years of proven and documented experience in commercial fish or seafood processing, fish filleting or a similar professional knife-handling position.
  • Excellent knife skills are essential.
  • Proven experience gutting, scaling, trimming and/or filleting fish.
  • Ability to work quickly and efficiently without compromising product quality.
  • Good understanding of seafood processing, hygiene and food safety standards.
  • Physically fit and capable of performing repetitive manual tasks for extended periods.
  • Comfortable working in chilled and wet processing environments.
  • Reliable, hardworking and able to work effectively as part of a production team.

Work Experience Evidence

Applicants must be able to provide verifiable documentation confirming their relevant work experience.

This may include employment reference letters, certificates of employment, employment contracts, payslips, payroll records, tax or social security records, or other reliable documentation confirming employment history and duties.

Applicants unable to provide sufficient evidence of their claimed seafood processing experience may not be considered.

Applicants requiring visa support must:

  • Meet the applicable Immigration New Zealand visa requirements for the position.
  • Meet any applicable Immigration New Zealand English language requirements, with acceptable evidence provided where required.
  • Meet Immigration New Zealand's health requirements, including medical examinations where required.
  • Meet Immigration New Zealand's character requirements, including police certificates where required.
  • Provide satisfactory documentation supporting their employment history, skills and experience.
